Learn How to Make Potato Salad with Mayonnaise
To make potato salad, simply begin by dicing your favorite potatoes into 1-2 inch dice. Soak the potatoes in cold water for about 15 minutes. Rinse the potatoes under cold water in a colander and place them into a large pot. Cover the potatoes with cold water and add some salt, some sugar, and some vinegar. Bring the potatoes to a boil and reduce the heat to a simmer. Cook the potatoes for 25-35 minutes or until they are fork-tender. Drain the potatoes and rinse lightly under some running water. Spread the cooked potatoes out onto a baking sheet and sprinkle (while still hot) with a little vinegar. Allow the potatoes to cool completely for about 30 minutes. In a separate bowl combine the mayo, mustard, green onions, herbs, relish, etc to make the dressing. Fold the potatoes into the dressing once they are cool, along with any other stir-ins such as chopped hard-boiled eggs. Cover the potato salad and place in the refrigerator to allow the flavors to meld for at least 2 hours before serving.
