What are scalloped potatoes?

Scalloped potatoes are potatoes that have been thinly sliced and cooked in a flavorful liquid that reduces and infuses the potatoes with seasoning. Typically, they are cooked in a casserole dish or a Dutch oven, although any pan with sides that are about 1-1/2 – 2-1/2 inches tall will work.
