Ingredients

Potato Tostones

  • 1.5 lbs. Fingerling Potatoes, washed and scrubbed
  • 4 Garlic Cloves, crushed
  • Cold Water, As Needed
  • 1/4 tsp Smoked Paprika
  • 1/4 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Ground Black Pepper
  • 1 tbsp Olive Oil

Charcuterie Board

  • Tinned Fish (Mussels, Sardines, Mackerel, Tuna, Clams)
  • White Onions, thinly sliced
  • Lemon Wedges
  • Parsley
  • Dill
  • Capers
  • Pickles

Preparation

1.) Cover the fingerling potatoes with cold water in a medium pot. Add the crushed garlic cloves and half of the salt to the pot. Bring to a boil and cook for 10-12 minutes, until the potatoes are tender.

2.) Once the fingerlings are par-cooked, allow them to cool down slightly so they are not too hot to handle. Using the bottom of a heavy glass, smash each fingerling down.

3.) Coat each smashed potato with olive oil and place them into your air fryer basket or tray, lining either with lightly oiled foil. Sprinkle the paprika, garlic powder, black pepper, and the remaining salt onto the oiled potatoes.

4.) Air fry for 15 minutes at 425 degrees F, until they are nice and crisp.

5.) Pair the potato tostones with tinned fish, sliced onions, fresh lemon, fresh herbs, capers, or pickles. A great charcuterie board option for any event!
