Description

Cheesy mashed potatoes stuffed in al dente manicotti topped with melted mozzarella over creamy alfredo sauce garnished with fresh parsley.

Ingredients

  • 8 oz (226 g) Manicotti
  • 2 qts (1892 ml) Water
  • 2 tbsp (34 g) Salt
  • 2 cups (480 ml) Alfredo Sauce
  • ¼ cup (15 g) Parsley (chopped)

Filling: Cheesy Mashed Potato

  • 2 cups (500 g) Cooked Mashed Potatoes
  • 1 cup (250 g) Ricotta Cheese
  • 1 cup (225 g) Shredded Mozzarella

Preparation

  1. Gather all ingredients and equipment needed.
  2. Preheat oven to 400°F (204°C).
  3. In a sauce pot, reheat alfredo sauce and hold at 135°F (57°C).
  4. In a heavy bottomed pot, add water and salt and bring to boil, then add manicotti and cook for 7-8 minutes until just done or follow manufacturer’s instructions.
  5. In a bowl, add mashed potatoes, shredded mozzarella and ricotta and mix until fully combined.
  6. Drain pasta, shake excess liquid, then add mashed potato mixture into a piping bag and fill manicotti or spoon mixture into manicotti.
  7. On a baking sheet, arrange filled manicotti and sprinkle mozzarella on top and place in oven for 3 minutes or until mozzarella melts and slightly browns in color.
  8. To serve, ladle sauce on plate, lay manicotti on top of alfredo sauce melted cheese side up, and then garnish with fresh chopped parsley. Serve at once.
