  • Frozen Potato Basket Weave Cuts
  • Thinly sliced eggplant
  • 3 Tablespoons olive oil
  • 1 cup crumbled goat cheese
  • 1/2 cup cilantro leaves
  • Frying oil


  1. Heat oil to 355ºF.
  2. Roast eggplant slices in a frying pan over high heat with olive oil; season with saltand pepper.
  3. When eggplants are half cooked, fry potatoes in frying oil; drain over papertowels.
  4. Build a tower alternating eggplant and potatoes; garnish with goat cheese and cilantro leaves.
