  • 1 bag (32 ounces) Crinkle Cut Fries, frozen

Ramen Seasoning

  • 2 tablespoons + 2 teaspoons (19 grams) Chicken Powder
  • 1 tablespoon (8 grams) White Pepper, ground
  • 1 tablespoon (8 grams) Fish Salt
  • 1 ½ teaspoon (6 grams) Sugar
  • 1 teaspoon (4 grams) Monosodium Glutamate (optional)
  • ¾ tablespoon (5 grams) Furikake
  • ½ teaspoon (1 gram) Togarashi (optional)
  • 1 ½ tablespoons (12 grams) Granulated Garlic
  • ¼ cup (35 grams) Sesame Seeds
  • ½ tablespoon (3 grams) Ginger, powdered

Spicy Miso Aioli

  • 8 ounces Mayonnaise
  • 2 ounces Chili Paste
  • 1 ½ tablespoons (27 grams) Red Miso Paste
  • ½ tablespoon (4 grams) Granulated Garlic

Preparation

  1. Combine chicken powder, white pepper blend, fish salt, sugar, MSG, furikake, togarashi, granulate garlic, sesame seeds, and ginger in a bowl. Mix.
    • Note: These spice measurements will yield more seasoning than necessary for a one 32-ounce bag of fries. Extra seasoning can be stored to use for future fry bags.
  2. Cook fries according to package instructions. Once cooked, put the fries into a paper bag.
  3. While fries are cooking, make the aioli. 7. In a bowl combine the mayo, chili paste, red miso, and granulated garlic. Mix until uniform.
  4. Sprinkle approximately 1 tablespoon of seasoning for every two cups fries into the bag. Shake to coat the fries in the seasoning, and then taste-test add more seasoning if you’d like.
  5. Tear open the bag, serve fries with the spicy miso aioli, and enjoy!
