Description

A summer fingerling potato salad with juicy cherry tomatoes, tossed in a luscious creamy pesto dressing topped with grated parmesan cheese and a chiffonade of sweet basil.

Ingredients

  • 2 pounds (907 g) Fingerling Potato (Chopped in halves or thirds)
  • ½ gal (2273 ml) Water
  • 2 Tbsp (34 g) Salt
  • ½ cup (115 ml) Mayonnaise
  • ¼ cup (59 ml) White Wine Vinegar
  • ¼ cup (59 ml) Pesto
  • 1 ½ Tbsp (11g) Capers
  • 1 Tbsp (14 g) Dijon Mustard
  • 1 Tbsp (14 ml) Lemon Juice
  • 1 Tbsp (6 g) Lemon Zest
  • 1 Tbsp (7 g) Black Pepper, Ground
  • 1/8 cup (11 g) Parmesan Cheese, Grated
  • 1/8 cup (3 g) Basil (Chiffonade)
  • 1 cup (149 g) Cherry Tomato (Halves)

Preparation

  1. Gather all ingredients and equipment needed.
  2. Chop fingerling potatoes in halves or thirds.
  3. In a pot, pour cold water and salt and add chopped fingerling potatoes and bring to boil then simmer and cook until fork tender but still firm. Drain water from potatoes using a strainer and run cold water to cool instantly. Shake off excess water, place in a bowl and set aside.
  4. To make dressing, in a medium sized bowl, add mayonnaise, white wine vinegar, pesto, capers, Dijon mustard, lemon juice, lemon zest and black pepper and whisk together until fully combined.
  5. Chiffonade basil into thin strips.
  6. To assemble, in the bowl of cooled cooked potatoes, add in pesto dressing and gently toss together. Sprinkle grated parmesan cheese and basil on top. Serve family style.

This will become my signature potato salad for summer pot lucks. I didn't have a fresh lemon, so I used bottled lemon juice with an extra splash to makeup for the zest. 1 tablespoon of black pepper seemed like a lot, but it was not. Perfect amount of spice for the dressing!
