Coppell Independent School District Roadshow

Students at Canyon Ranch Elementary School in Coppell Independent School District participated in a special Recipe Testing Road Show featuring three unique potato recipes developed for this school. The recipes tested included a Potato Breakfast Bowl with roasted hash brown, scrambled eggs and cheese, Bombay Pizza with crispy roasted potatoes, melted mozzarella, coconut curry sauce, cilantro, thinly sliced red onion and bell peppers, and a Potato and Cheese layered Lasagna with a home-made marinara sauce.

Coppell ISD already makes use of many potato products in their day to day operations. Their students enjoy everything from roasted, to mashed and their recently introduced, baked potato bar. Yet with such a culturally diverse vegetarian population, they wanted to expand their offerings. Hence, they reached out to Potatoes USA and scheduled a Recipe Testing Road Show!

Students provided feedback via emoji yum scale posters and comment cards after sampling each recipe. The most loved recipes were the Bombay Pizza followed by the Potato Lasagna. Students were overwhelming ecstatic with the new menu ideas and expressed their gratitude and love of potatoes. One student stated, “the Bombay Pizza reminds me of my mom’s cooking!” Another said, “I have 3 words – THAT WAS AMAZING!!!” Coppell ISD will use the student feedback to determine which recipes will make it on the district menu. The feedback also helps Potatoes USA tailor its offerings to meet the growing and changing demand of today’s students and school nutrition professionals.

In order to make an extra splash, CISD filmed our hands-on, in the kitchen, potato training in-service with Canyon Ranch staff to share with the whole district. This way, the whole school district can experience the valuable training Potatoes USA had to offer.
