Favorite Potato Recipe: Chicopee Public Schools participate in a program called ChicopeeFRESH, a farm-to-school program bringing in fresh local produce to schools in their district. With this fresh produce, creative school operators like Greta have created two show-stopping breakfast dishes.
First, a build-your-own breakfast bowl! “Students can top scrambled eggs, local home fries, and cheddar with a variety of toppings including bacon, ham, sausage, salsa, and jalapenos.” This dish can be served hot on the line, or utilize your salad bar to display delicious toppings.

Chicopee also serves an Egg Frittata with local ingredients! A mixture of fresh local eggs, milk, onions, cheese, bacon and mayonnaise is poured onto a base of thinly sliced red potatoes. Bonus – this recipe is gluten-free!
Tater Tip: As delicious as these recipes are with fresh ingredients, it’s easy to modify and use ingredients you already have in your school kitchens. If you don’t stock fresh potatoes, use frozen potato chips or slices for the frittata, and frozen home fries for the breakfast bowl. Your students don’t like spice? Substitute jalapenos for green onions or a second salsa option!
