Technique: Potato Cannoli Shell: Potato Sides & Desserts, Oh My!

A potato cannoli shell has a wide variety of applications across many dayparts and flavors. It all starts with the potato. Choosing the perfect russet potato will give you the width and ideal starch level needed to hold a cannoli shape. This unique method of plating potatoes can be easily done by using a mandolin to thinly slice sheets of potatoes.
