International Inspiration: Breakfast with Potatoes: Spanish Tortilla

A Spanish Tortilla or Tortilla Espanola is a traditional Spanish dish, similar to an omelet, and can be served warm or cold, as an appetizer, light meal, or as a breakfast item. It’s always prepared with potatoes, eggs and olive oil and often other ingredients are included, such as onions, peppers or garlic for variety and flavor.  Watch Chef Dan Kish prepare one here.

The Tortilla Espanola is a perfect option for grocerants since it’s convenient and portable and provides a great grab and go item for their customers.

 

Tortilla Espanola

(Serves 4)

Ingredients

4 medium potatoes, peeled and thinly sliced

1 cup olive oil

1 medium onion, sliced

6 eggs, beaten

Preparation

-Heat olive oil in a nonstick pan.  Add potatoes, onions, salt and pepper.  Turn potatoes every few minutes until tender.

-Once tender, drain potatoes in colander, reserving olive oil.

-Add 2 tbsp oil back to the pan.  Gently mix warm potatoes with eggs, add to skillet.

-Cook on medium-low for 5 minutes.  Flip tortilla and cook until eggs are cooked through.

-Enjoy!
