Technique: Spiralized Potato Noodles

For a literal twist on a classic dish, consider spiralizing potatoes and using them hot or cold as a gluten-free pasta replacement potato salad! Yes, it’s true—potatoes can be spiralized using a spiralizer, then rinsed and steamed for 10 to 15 minutes until al dente. Once steamed, they can be served hot or chilled and used in a variety of salad possibilities.

Consider the possibilities of different size spirals to imitate spaghetti, udon or chow fun noodles! Toss in red wine vinaigrette and mix in some olives, sun-dried tomatoes and spinach for a Mediterranean-inspired salad or go Asian with sesame dressing, carrots, snow peas, shiitake mushrooms and cilantro.

This new and creative way to utilize a familiar vegetable will really stand out in a deli case or in the grab-and-go section. It is also a way for consumers to try flavors from new cuisines in an unintimidating way.
