Research: Potatoes as Gluten-Free Alternatives

Today, some 3.1 million people across the United States follow a gluten-free diet.1 The number of Americans going gluten-free has tripled since 2009. According to Innova Market Insights, items with a gluten-free claim accounted for nearly 25% of all food and beverage launches in 2017, up from 16.6% in 2013. Additionally, it is forecasted that the U.S. gluten-free category will reach $2 billion in 2020, up from $400 million in 2015.2
