Ingredients

Taquitos

  • 11 oz (336 g) Corn tortillas (12 each)
  • As needed Oil or oil spray

Pepper Jack Mashed Potatoes:

  • 2 cups (100 g) Dehydrated potato flakes
  • 4 cups (946 g) Hot water
  • 2 cups (166 g) Pepperjack cheese, shredded/grated

Hot Sauce Crema:

  • 1/2 cup (118 ml) Hot sauce
  • 1 cup (236 ml) Sour cream

Preparation

  1. Gather all ingredients and equipment needed.
  2. Preheat the air fryer to 350°F (176°C).
  3. In a large bowl, add dehydrated potato flakes and hot water and cover with foil for 12-15 minutes or follow the manufacturer’s instructions. Remove the covering and mix thoroughly with a spatula or whisk. Let cool completely. Then add grated pepper jack cheese and mix until fully incorporated. Set aside.
  4. To make hot sauce crema, in a small bowl add sour cream and hot sauce and whisk until fully combined. Set aside.
  5. Place corn tortillas in the air fryer for 1-2 minutes just to heat them to make it easier to roll them up after filling them.
  6. Spread warm tortillas out on a baking sheet just to make them easier to roll, scoop pepper jack mashed potato onto the tortilla, then roll, then place them onto the air fryer basket or tray seam side down. Brush or spray oil over the taquito. Repeat the step until you fill the basket or tray. Then air fry for 8-10 minutes or until tortillas are light golden brown and crispy.
  7. To serve, place taquitos on a plate or serving platter and drizzle hot sauce crema over them.
