Description

Rich and gooey buffalo chicken casserole with cream cheese, ranch, and buffalo wing sauce. All topped with crispy tots and green onions. Perfect for any family gathering or the big game.

Ingredients

Shredded Chicken

  • 4 cups (960ml) Chicken Stock
  • 2 pounds (904g) Chicken Breast, boneless, skinless

Buffalo Cheese Sauce

  • 3 tablespoons (45g) Unsalted Butter
  • 1-1/4 cups (280g) Yellow Onion, diced
  • 1/3 cup (45g) All Purpose Flour
  • 2-1/2 cups (600ml) Chicken Stock (Reserved from above)
  • 6 ounces (150g) Sour Cream
  • 8 ounces (226g) Cream Cheese, softened
  • ½ cup (120ml) Buffalo Wing Sauce
  • 3 tbsp Ranch Powder (42 g)

Casserole

  • 16 ounces (400g) Tots, Tater Barrels, Tater Drums, Tater Crowns
  • ¼ cup (35g) Green Onions, chopped
  • ½ cup (56g) Blue Cheese Crumbles (Optional)

Preparation

  1. Preheat the oven to 375 F (190 C). 
  2. In a medium saucepan, add the chicken stock and place over medium-high heat. Add the chicken breast and allow the chicken to simmer in the chicken stock until fully cooked, about 15 minutes. Remove the chicken from the pot and allow it to cool slightly before shredding. Reserve the liquid for the sauce. 
  3. In a large, heavy bottomed pot melt the butter over medium-low heat. Add the onions and cook for 4-5 minutes or until they are soft and translucent. Add the flour and cook for 1-2 minutes while stirring constantly. 
  4. Gradually add the reserved chicken stock from step one while stirring to make the sauce. Once all the stock is incorporated, stir in the sour cream, cream cheese, ranch powder, and wing sauce. Remove the sauce from the heat and stir in the shredded chicken. Transfer the chicken and the sauce to a 9×11 casserole dish. 
  5. Arrange the frozen tots on the casserole in an even layer until the casserole is covered. 
  6. Place the casserole into the oven and bake for 35-40 minutes or until the casserole is bubbling and the potato topping is crispy. 
  7. Remove the casserole from the oven and sprinkle with the green onions and blue cheese if desired. 
  8. Serve right away with carrots and celery if desired and enjoy.
