Seasoned mashed potatoes studded with pepper jack cheese and served crispy right out of the air fryer.

Ingredients

+

Buffalo Potato Nuggets

  • 1 ¾ C (400g) water
  • 1 ¼ C (100g) potato flakes (instant mashed potatoes)
  • 1/3 C (75g) potato starch (corn starch may be subbed)
  • 2 tbsp (10 g) buffalo sauce seasoning
  • 1 each, large egg
  • 4 ounces (113 g) pepper jack cheese, shredded

  • ¾ C (90 g) AP Flour
  • 2 large eggs
  • ¾ C (90 g) Breadcrumbs

Buffalo Ranch

  • ¼ C (60mL) Buffalo Hot Sauce
  • ¼ C (60 mL) Ranch Dressing

Other Ingredients

  • Cooking Oil Spray, as needed
  • 1 C (150 g) carrot sticks
  • 1 C (150g) celery sticks

Preparation

  1. Preheat an air fryer or convection oven to 360 F (182 C).
  2. To make the nuggets, begin by adding the water to a medium mixing bowl. Add the potato flakes and stir. Allow them to sit for about a minute and stir again to fluff. Make sure all the potato flakes are absorbed by the water.
  3. Mix the potato starch, buffalo sauce seasoning, egg, and pepper jack cheese into the mashed potatoes. Form the mashed potatoes into 2 inch round pieces (each should weigh about 40g) and arrange them on a baking sheet lined with aluminum foil. Repeat until you have used up all the mashed potatoes. One recipe will yield 18 nuggets.
  4. Once the nuggets are made prepare the breading by separating the flour, eggs, and breadcrumbs into three separate dishes. Beat the eggs with a fork or whisk until well beaten. Working with one hand as a dry hand and one as a wet hand, dredge the potato nuggets into the flour then into the egg, and finally into the bread crumbs and arrange them back on the baking sheet lined with aluminum foil. Lightly spray the breaded nuggets with the cooking oil spray and place them in the air fryer for 9 minutes. When the timer goes off, flip the nuggets and return them to the air fryer for an additional 6 minutes. Remove from the air fryer and allow to cool for 1-2 minutes before serving.
  5. While the nuggets are cooking prepare the buffalo ranch by mixing the buffalo sauce with the ranch in a small bowl until well incorporated.
  6. Serve the sauce with the nuggets, carrot sticks, and celery sticks. Enjoy!
