Ingredients

  • 1 1/2 pounds (4 or 5 medium) potatoes, uniform in size
  • 1 container plain fat-free yogurt
  • 1/2 cup fat-free sour cream
  • 1/4 cup grated Parmesan cheese
  • Pepper, to taste

Preparation

  1. In a 3-quart saucepan, bring 1 quart of water to a boil.
  2. Add the potatoes, return to a boil, cover and cook over medium heat 15 to 20 minutes or until very tender.
  3. Drain thoroughly then shake pan over low heat 1 minute.
  4. Add yogurt, sour cream and cheese to potatoes.
  5. Mash with potato masher or portable electric mixer until well blended.
  6. Season with pepper.
