Description

Crispy and full of flavor these oven baked fries will have you taste buds yearning for more. Seasoned russet potatoes are drizzled with olive oil and baked until crispy before being tossed with chopped garlic and sprinkled with pomegranate seeds, and crumbled goat cheese.

Ingredients

  • 3 each (5.3 ounce or 150g each) Russet Potatoes
  • 3 cups (720ml) Cold Water
  • 2-1/2 tablespoons (37.5ml) Olive Oil, divided
  • ½ teaspoon (3g) Salt
  • 2 each (10g) Garlic Cloves, minced
  • 2 ounces (57g) Goat Cheese, crumbled
  • ¼ cup (46g) Pomegranate Seeds (Arils)
  • ¼ cup (4g) Cilantro Leaves

Preparation

  1. Preheat oven to 425° F and line a large baking sheet with parchment paper.
  2. Cut potatoes into ¼-inch sticks. Fill a large bowl with cold water. Submerge potatoes into water and let site for 20 minutes.
  3. Drain potatoes, spread onto a clean kitchen towel and pat dry. Add potatoes to baking sheet and toss with 1 Tbsp. olive oil. Spread into one layer, keeping some space between the potatoes. Season with salt.
  4. Bake for 25-30 minutes or until slightly browned and crispy. While potatoes bake, heat remaining 1.5 Tbsp. olive oil in a small saucepan over medium heat. Add garlic and cook for 1 minute or until garlic turns golden brown. Set aside.
  5. After potatoes are baked, transfer to a serving plate. Drizzle potatoes with garlic oil mixture. Crumble goat cheese over the potatoes and top with pomegranate arils and cilantro.
