Loaded Baked Potato Dip with Fingerling Chips

Description

Whipped light and creamy potatoes with smoky bacon, cheddar, sour cream, and chives, baked in the oven and served with crispy sea salt chips.

Ingredients

Loaded Baked Potato Dip

  • 2 3/4 c (660 ml) Water
  • 4 1/2 tbsp (75 g) Butter, unsalted
  • 1/2 tsp (1 g) Kosher Salt
  • 1 1/2 c (360 ml) Milk
  • 3 c (150 g) Potato Flakes
  • 1/3 c (90 g) Bacon Bits
  • 1/3 c (8 g) Chopped Chives or Green Onions
  • 3/4 c (120vg) Cheddar Cheese, shredded
  • 1/2 c (120 ml) Sour Cream
  • 1 tsp (2 g) Kosher Salt
  • 1 tsp (1 g) White Pepper, freshly ground

Fingerling Potato Chips

  • 1 1/2 lbs (680 g) Fingerling Potatoes, thinly sliced, lengthwise
  • Vegetable Oil for frying
  • 1 tsp Fine Sea Salt

Preparation

Preparing the Fingerling Potato Chips

  1. Heat the oil to 350°F (177°C).
  2. Thinly slice the potatoes using a knife or a mandolin.
  3. Fry the potatoes in batches about 6-8 minutes until they are crisp.
  4. Drain the chips on a tray lined with paper towels and season them with sea salt.

Preparing the Potato Dip

  1. Preheat the oven to 350°F.
  2. Heat the water, butter, and salt to boiling in a medium saucepan. Remove from the heat.
  3. Stir in the milk and potato flakes with a small whisk or fork until the potatoes are the desired consistency.
  4. Mix in the bacon, chives, ½ cup cheese, sour cream, salt, and pepper.
  5. Transfer the loaded mash into an oven-safe dish. Top the potatoes with the remaining ¼ cup of cheese and place in the oven for 8-10 minutes or until the cheese is melted and the potato dip is hot.
  6. Arrange the chips next to the potato dip and enjoy!
