Casserole

  • 16 each (1024 g) Hash Brown Patties
  • 8 each (352 g) Egg
  • 2 cups (473 ml) Milk, skim
  • ½ tsp (4 g) Ground Black Pepper
  • 1 cup (52 g) Red Onion (sauteed)
  • 2 cups (60 g) Spinach (sauteed)
  • ½ cup (90 g) Kalamata Olives (halves)
  • 1 cup (92 g) Roasted Red Peppers (sliced)
  • 1 cup (225 g) Mozzarella (shredded)
  • ½ cup (125 g) Ricotta Cheese

Raita Sauce

  • ½ cup (118 ml) Greek Yogurt, nonfat
  • 3 tbsp (45 ml) Lemon Juice
  • ½ cup (60 g) Cucumber (chopped/grated)
  • ½ tbsp (4 g) Garlic (minced)
  • 1 tbsp (2 g) Fresh Mint (chopped)
  • ½ tsp (3 g) Salt
  • ½ tsp (2 g) Black pepper, ground

Preparation

  1. Gather all ingredients and equipment needed.
  2. Preheat the oven to 350°F (176°C).
  3. To make the Mediterranean potato casserole, layer ingredients as follows in a medium-sized casserole dish (bottom to top) :
  • Hash brown patties
  • Shredded mozzarella
  • Kalamata olives
  • Roasted red peppers
  • Hash brown patties
  • Ricotta cheese
  • Sauteed spinach
  • Sauteed red onions
  • Hash brown patties
  1. Then add eggs, milk, salt, and pepper in a large bowl and whisk until fully incorporated and pour over hash brown casserole. Place the casserole dish into the preheated oven and bake for 40 minutes or until light golden brown and crisp.
  2. To make raita, in a large bowl, add yogurt, chopped or grated cucumber, mint, minced garlic, lemon juice, salt, and black pepper and fold together with a spatula or spoon until fully combined.

Serve in a casserole dish or plate with raita sauce on the side.
