Description

This vibrant dish is composed of fresh guacamole, corn and black bean salsa, and fresh cilantro sitting on beautifully crispy hash brown patties seasoned with chili lime salt.

Ingredients

Toast

  • 4 Hash Brown Patties, frozen
  • 1 tsp (4 g) Chili Lime Salt

Guacamole

  • ¼ cup (37 g) Red Onion, diced
  • ½ cup (75 g) Tomatoes, diced
  • 1 tbsp Jalapeno, deseeded and diced
  • 2 medium Avocados, peeled and pitted
  • 1 tsp (4 g) Garlic Salt

Black Bean Corn Salsa

  • 1 cup (8 oz) canned Black Beans, drained
  • ½ tsp (2 g) Chili Powder
  • ½ tsp (2 g) Ground Cumin
  • ¼ cup (37 g) Corn, thawed if frozen, drained if canned
  • ¼ cup (60 mL) Salsa (Pico de Gallo preferred)
  • 2 tbsp (8 g) fresh Cilantro, chopped

Preparation

  1. Preheat oven to 450 degrees F. On a baking sheet lined with parchment paper, place your frozen hash brown patties.
  2. Bake the patties for 7 minutes and flip, cooking for an additional 7 minutes. Or bake according to package instructions until golden and crispy.
  3. Prepare chopped vegetables and herbs while the hash browns bake.
  4. Remove from oven and season with the chili lime salt.
  5. In a small bowl, mash avocado with garlic salt, and add in diced onions, jalapeno, and tomatoes, gently mix until ingredients are combined.
  6. In a small bowl, add black beans, corn, salsa, chili powder, cilantro, and cumin. Stir to combine.
  7. Place all the hash brown patties flat on a tray. Spread guacamole on each hash brown patty, then top each with equal amounts of black bean corn salsa.
  8. Serve immediately and enjoy!
