Ingredients

  • 2 – 6 oz. Barramundi filets
  • 2 cups fingerling potatoes
  • 2 cups fresh green beans
  • 2 cloves of garlic
  • 1 Tablespoon olive oil
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 medium lemon
  • Thyme sprigs

Preparation

  1. Preheat oven to 375º F.
  2. Par boil the potatoes for 8-10 minutes in boiling water.
  3. Arrange the potatoes, then the green beans in the center of the parchment paper. Place the fish over the beans and sprinkle with salt, pepper, paprika. Add 2 lemon slices then top with 2 thyme sprigs.
  4. Drizzle oil over everything.
  5. Fold the sheet of parchment into a sealed packet.
  6. Place on a baking sheet and bake in the preheated oven for 15 minutes. Enjoy!

Made it today. It turned out ok but with a few reservations. Next time I will pre boil the beans together with the potatoes, because they were nowhere near done. Same with the fish which needed a few minutes longer. The potatoes were ok but I had also boiled them a little longer before. Other than that it was a tasty meal, the spicing is right. I added a sour creme dip for the fish and the potatoes. I might next time wrap it into two individual portions. I think it might be easier to seal.
