Ingredients

  • 1/2 cup frozen potatoes, curly cut
  • 1/2 cup light Chihuahua cheese
  • 12 cherry tomatoes
  • 1 bunch scallions, washed and disinfected
  • 4 slices turkey bacon

Preparation

  1. Grate cheese, cut tomatoes into quarters, and finely chop the stems and bases of the scallions.  
  2. Brown the bacon in a pan or microwave oven and then chop it finely.
  3. Place a bed of frozen curly potato in a baking dish, add a layer of onions, bacon, and tomatoes, cover with grated cheese, and bake, covered with foil, for 20 minutes at 355°F.
