Ingredients

  • 1 ½ cups yellow potatoes, diced
  • ½ cup green onions, sliced
  • 1 teaspoon whole cumin
  • ½ teaspoon cayenne pepper or to taste
  • ½ teaspoon salt or to taste
  • 1 Tablespoon olive oil

Preparation

  1. In a medium skillet, heat the oil over medium-high heat.
  2. Add cumin seeds, swirl or stir around pan for 10 seconds.
  3. Add the green onions and cook for 1 minute.
  4. Add potatoes and season with cayenne pepper and salt.
  5. Stir 3-5 minutes.
  6. Cover and reduce heat to medium-low.
  7. Stir occasionally until potatoes are tender.
  8. When the potatoes are tender, if there is any water remaining in the pan, turn up the heat and allow the water to evaporate. Once water is evaporated, the potatoes are ready.
  9. Serve with roti (Indian flatbread) or naan.
