Purple Potato Spread

Ingredients

  • 2 medium purple potatoes
  • 1 tablespoon sour cream
  • 1 tablespoon goat cheese
  • 1 pinch salt
  • 1 pinch chives

Preparation

  1. Preheat oven to 350˚
  2. Wash and dry the purple potatoes and place in a small baking dish. Roast in the preheated 350˚F oven for about 60 min, or until the potatoes are tender through the center when pierced with a knife.
  3. Remove the skin from the baked potatoes and discard the skin. Place the potato flesh in a medium mixing bowl.
  4. Add the sour cream, goat cheese, and salt, and whisk together.
  5. Stir in the chives.
  6. Transfer the purple potato spread to a container and cover with a lid. Use the spread on your favorite sandwiches.
