Description

Ingredients

Smoky Red Potato Wedges

  • 2 lbs. (906 g) Red potatoes, sliced into wedges
  • 2 tbsp (30 ml) Vegetable oil
  • 2 tbsp (30 ml) Liquid smoke

Vegan White Bean Queso

  • 2 cans (878 g) White beans, canned, drained
  • 4 tbsp (44 g) Nutritional yeast
  • ¼ cup (30 g) Green Chili, diced, canned
  • ¼ cup (30 g) Pimientos, diced, canned/jarred
  • To taste Salt and ground black pepper

Preparation

  1. Gather all ingredients and equipment needed.
  2. Preheat the oven to 350°F (176°C).
  3. Rinse red potatoes and slice into wedges and hold them in cold water. Drain water and shake off excess water. Place potato wedges in a large bowl and add vegetable oil, liquid smoke, salt, and ground black pepper and toss until potato wedges are fully coated.
  4. Place seasoned potato wedges on a parchment paper lined sheet tray and spread evenly, place potatoes in preheated oven and roast for 25 minutes or until golden brown in color and crisp. Remove potatoes from the oven and let cool slightly.
  5. In a blender or food processor, add drained white beans, and nutritional yeast, and blend until smooth or desired consistency. Pour the white bean and nutritional yeast mixture into a bowl and add diced green chili, and diced pimientos, and fold until fully incorporated.
  6. To serve, place roasted red potato wedges on a serving dish or platter and ladle white bean queso into a bowl and garnish as desired.

Variations

If using an air fryer:

  • Preheat the air fryer to 400°F (204°C).
  • Place seasoned potato wedges on the air fryer basket or tray and bake for 10 minutes. Then flip to the other side using tongs and cook for another 5-7 minutes or until potato wedges are light golden brown in color and crisp. Remove potato wedges from air fryer and place them on a paper towel lined tray or plate.
