Ingredients

Spicy Garlic Fries

  • 2 lbs. (907 g) Russet potatoes, skin-on, French fry cut
  • 2 tbsp (30 ml) Vegetable oil
  • 2 tbsp (5 g) Garlic powder
  • 1 tsp (2 g) Cayenne powder
  • To taste Salt
  • To taste Black pepper, ground

Edmame Hummus

  • 2 ½ cups (340 g) Edamame, shelled
  • 1 cup (164 g) Garbanzo beans, canned, drained
  • ¼ cup (60 ml) Lemon juice
  • 1 tsp (2 g) Lemon zest
  • To taste Salt
  • To taste Black pepper, ground

Preparation

  1. Gather all ingredients and equipment needed.
  2. Preheat the oven to 350°F (176°C).
  3. Rinse potatoes and using a large sharp knife, slice potatoes into French fries and hold them in cold water. Drain water and shake the excess water off the potatoes and place into a large bowl. Add vegetable oil, garlic powder, cayenne powder, salt, and black pepper and toss until fully incorporated.
  4. Place seasoned fries onto a parchment paper lined sheet tray and place into the preheated oven and roast for 30 minutes or until light golden brown in color and crisp. Remove French fries from the oven and let cool slightly.
  5. In a blender or food processor, add edamame, garbanzo beans, lemon juice, and lemon zest, and blend until smooth. Add salt and black pepper to taste, and blend until fully incorporated.
  6. To serve, place spicy garlic fries onto a serving dish or platter, and spoon edamame hummus into a bowl and garnish with edamame and sesame seeds or as desired.

Variations

If using an air fryer:

  • Preheat the air fryer to 375°F (190°C).
  • Place seasoned fries on the bottom of the tray or basket. Do not stack fries.
  • Cook for 13 – 15 minutes or until light golden brown in color and crisp.
  • Remove fries from the air fryer and place on a paper towel lined tray or plate.
