Ingredients

  • 2 tbsp Olive Oil or Butter
  • 1 medium Onion (150 g), diced
  • 1 Red Bell Pepper (150 g), diced
  • 1 Green Bell Pepper (150 g), diced
  • 3 cloves Garlic, minced
  • 1 1/2 lbs (680 g) Yellow Potatoes, diced small (skin on)
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp dried Thyme
  • Salt and Black Pepper, to taste
  • 1/2 cup cooked Ham, diced or Breakfast Sausage (optional, “roast beast”) (3 ounces)
  • 1/3 cup Shredded Cheddar or Swiss Cheese (optional)
  • Fresh Parsley or Chives, chopped, for garnish

Preparation

  1. Place diced potatoes in a pot of salted water, bring to boil, and cook 5 minutes until just fork-tender. Drain and let steam dry.
  2. Heat oil in a large skillet over medium-high. Add onion and peppers, cook 5–6 minutes until softened. Stir in garlic.
  3. Add potatoes to skillet. Season with paprika, thyme, salt, and pepper. Let cook undisturbed 4–5 minutes to develop a crust, then stir. Repeat until golden and crispy.
  4. Add protein (if using). Stir in ham or sausage, cook until warmed.
  5. Sprinkle cheese over top, cover pan for 1 minute to melt. Garnish with fresh parsley or chives.
