Congratulations to Diana Allen and the lunchroom staff at Campton Elementary for being the grand prize winner of our “Wake Up with Potatoes” breakfast recipe contest! Diana and her staff created this recipe for Kentucky Breakfast Hash to serve their students a breakfast dish that was new and exciting while staying true to the flavors their students enjoyed.
“Most of our kids like scrambled eggs, bacon, ham, shredded cheese and, of course, hash browns. We tried this recipe during National School Breakfast Week it and it was a success. The kids loved it. To see their little faces light up when you tell them that all the things they like are in one recipe is totally awesome.”

Diana, who’s been at Campton Elementary for 10 years, says the students are truly the best critics. “They will tell you just how they feel about the food, either good or bad. Just to know that you have fed at least one child a meal that they truly enjoyed is so rewarding and it makes your job, no matter how hard it can be, seem so much better. We love our job and our kids – all of them.”
Diana and her staff have been rewarded with a $500 gift card to go towards improving their school kitchen. Chef Robin Obert, Oklahoma City Public Schools District Executive Chef, was selected as the runner up for her “Huevos Rancheros con Papas” recipe.
