Erica loves to make these potatoes for her students at breakfast time. They are filling, delicious, and easy to prep. Erica says, the idea came to me to find a way to utilize leftover baked potatoes. Plus, it is gluten-free and the cheese could be omitted if you wanted to make it dairy free. This is a hearty breakfast item that would fill up a student-athlete. The item could be prepped the day ahead and assembled quickly for breakfast the next morning.
She also created this delicious potato pizza! A breakfast pizza with a potato crust. The inspiration came when I got my new job and in the freezer were frozen potato chips and we have no fryer. So I started thinking of ways to use the product up. This is a filling gluten-free pizza.
