Erica McMahan has been the Cafeteria Manager at Norwood Elementary School in Anderson County TN for four years. Erica is extremely creative and her dishes not only taste amazing, but they are also always presented beautifully. Erica created this dish in Anderson County School District’s “Potato Playoff” challenge and she wanted to make sure the ingredients she used were widely available in most school cafeterias. She only used what she had and the students and staff loved her recipe!
