School Foodservice Operator of the Month: Rita McDonald

Title: School Nutrition Manager

District: Baker Place Elementary School, Georgia

Students Served: 180 for breakfast, 430 for lunch

Favorite Potato Hack: I have a group called NAC “Nutrition Advisory Council.” We meet every month and do taste testing, community activities, physical activities, and we have a garden that the children planted, and take care of. We have never planted potatoes before now, so to get them excited about planting potatoes we made a potato snack. Potato bruschetta.

Potatoes USA donated three 55 gallon tubs to Baker Place’s Nutrition Advisory Council to help students learn about growing fruits and vegetables.

This fun snack starts with baked potato rounds which are then topped with creamy cheese, pepperoni and fresh diced tomatoes. As a finishing touch, sprinkle each bruschetta with Italian seasoning. Bonus points if the potatoes are home-grown! The students of Baker Place Elementary loved this dish.
