Description

This delightful Cajun inspired stew will excite your tastebuds with the flavors of New Orleans. This stew is loaded with creamy red potatoes, tender spinach, hearty lentils, succulent pork sausage, and diced tomatoes. The smoky and slightly spicy flavors will have your mouth watering.

Ingredients

  • 1 tablespoon (15ml) Olive Oil
  • ¾ cup (103g) Onion, chopped ½ inch dice
  • 1 each (5g) Garlic Clove, minced
  • 3 cups (450g) Red Potatoes, Diced 1-inch pieces
  • 1 cup (210g) Red Lentils, rinsed
  • 2 cups (60g) Spinach, roughly chopped (Any dark leafy green can be subbed such as beet greens, kale, turnip greens or collards)
  • 16 ounce can (453g) Diced Tomatoes
  • 12 ounces (340g) Andouille Sausage, sliced
  • 3 cups (720ml) Water
  • 1 teaspoon (3g) Creole Seasoning

Preparation

  1. In a large 8-quart soup pot, heat the olive oil.
  2. Add the onions and garlic, then sauté over medium heat for 5 minutes.
  3. Add the remaining ingredients, except for the spinach to the pot.
  4. Simmer the stew for 20-25 minutes, stirring occasionally, until the potatoes are tender, and the lentils are cooked through.
  5. Stir in the spinach, portion, and enjoy.
