Description

The Crispy Chickpea & Potato California Salad features golden, roasted chickpeas and tender potatoes, paired with fresh cucumbers, tomatoes, and creamy avocado. Tossed in a light, tangy dressing, it’s a vibrant and satisfying blend of crunchy, creamy, and zesty flavors.

Ingredients

Roasted Potatoes

  • 2 medium (440 g) Roasted Potatoes
  • 1 tsp (4.5 g) Neutral Oil
  • 2 tsp (9 g) Maple Syrup
  • 1 tbsp (15 g) Dijon Mustard

Salad

  • 1 c (230 g) Grapefruit, in chunks
  • 1 1/2 c (210 g) Grapes, sliced lengthwise
  • 1 (175 g) Avocado, cubed
  • 1/2 (150 g) English Cucumber, sliced into half moons
  • 5 c (150 g) Red Leaf Lettuce
  • 1 can (15 oz) Chickpeas, drained and rinsed
  • 2 tbsp (16 g) Almonds, sliced

Grapefruit Vinaigrette

  • 1/2 c (120 g) Grapefruit Juice
  • 1 tsp (2 g) Grapefruit Zest
  • 3 tbsp (40 g) Extra Virgin Olive Oil
  • 1/4 c (60 g) Red Wine Vinegar
  • 2 tsp (10 g) Dijon Mustard
  • 2 tsp (10 g) Maple Syrup
  • 1/4 tsp (1.5 g) Salt
  • 1/8 tsp (0.3 g) Pepper

Preparation

Preparing the Potatoes

  1. Peel and cut potatoes, and then add them to a bowl with the mustard, oil, and maple syrup. Toss to combine, ensuring that the potatoes are evenly coated.
  2. Place into an aluminum foil-lined tray, lightly sprayed with oil, or air fryer basket. Air fry for 20 minutes at 375°F, or until the potatoes are golden and crisp.

Preparing the Chickpeas

  1. After draining and rinsing canned chickpeas, season them with 1 tsp oil, and salt and pepper to taste.
  2. Air fry for 15 minutes at 375°F (this can be done simultaneously with the potatoes if your air fryer has the space).

Preparing the Salad

  1. While the potatoes and chickpeas are air frying, cut the grapefruit, grapes, avocado, cucumber, and lettuce.
  2. To make the vinaigrette, combine in a small bowl the grapefruit juice & zest, the EVOO, red wine vinegar, Dijon mustard, maple syrup, salt, and pepper. Whisk together until fully mixed.
  3. Assemble the salad by tossing the potatoes, chickpeas, and produce in the vinaigrette. Add shredded chicken if you’d like. Enjoy!

Note: To prepare ahead of time, combine the salad ingredients, keeping the vinaigrette separate until ready to serve. Keep these in the fridge for up to 5 days.
