Description

Pizza on potatoes! Golden brown crispy hash brown patties topped with a zesty marinara sauce, stretchy melted mozzarella cheese and sweet bell peppers.

Ingredients

  • 48 each Hash Brown Patties
  • 6 Cups (1440ml) Marinara Sauce
  • 6 Cups (768g) Mozzarella Cheese (Shredded)
  • 6 Cups (768g) Red or Yellow Bell Peppers (Small Diced)

Preparation

  1. Gather all ingredients and equipment.
  2. Bake hash browns on sheet tray in a 400 F (204 C) for 12-15 minutes or according to manufactures recommendations. Remove, allow to cool slightly or hold at 140 F (60 C).
  3. On the same tray with the hash browns, spread marinara sauce (2Tbsp/ 30ml per hash brown) on hash brown patties, sprinkle shredded mozzarella cheese (2 Tbsp / 30g per hash brown) on top of marinara sauce and top off with diced bell peppers (1 Tbsp / 16g per hash brown patty).
  4. Place same tray in oven at 350°F/176°C and let cheese melt, about 2-3 minutes. Remove tray from the oven.
  5. Serve 2 hash brown pizzas as a serving size (Each serving credits as ½ cup of starchy vegetables and ¼ cup red/orange vegetables in addition to 2 oz MMA).
