Description

Crispy hash brown “toast” is topped with creamy hummus, crisp cucumber, peppery radishes, fresh herbs, and a squeeze of lemon for a refreshing, plant-forward bite that's perfect any time of day.

Ingredients

  • 2 Hash Brown Patties, frozen
  • ½ cup (120 grams) Hummus, prepared
  • ½ cup Cucumber (about ½ English cucumber), thinly sliced
  • 1-2 Radishes, thinly sliced
  • ½ cup Microgreens or Baby Arugula
  • 1 tablespoon Fresh Parsley, chopped
  • 2 tablespoons Feta, crumbled (optional)
  • 1 teaspoon Lemon Zest (optional)
  • Extra Virgin Olive Oil, for drizzling (optional)
  • Freshly ground Black Pepper

Preparation

  1. Cook the hash brown patties according to package directions until deeply golden and crisp on both sides.
  2. To prepare the vegetables, thinly slice the cucumber and radishes. If using microgreens or arugula, give them a quick rinse and pat dry.
  3. Assemble the toast by spreading the hummus evenly over each crispy hash brown patty.
  4. Layer on the cucumber, radishes, and microgreens or arugula.
  5. Sprinkle with the chopped parsley and, if desired, the crumbled feta and lemon zest.
  6. Finish with a light drizzle of olive oil (if using) and freshly ground black pepper. Serve immediately and enjoy!

Tips & Tricks

  • To ensure hash browns get extra crispy, cook them in an air fryer at 400°F for 10–12 minutes, flipping halfway through.
  • Slice the vegetables thinly. Thin slices make the toast easier to eat and allow every bite to include a little of everything.
  • Use your favorite hummus. Classic, roasted garlic, roasted red pepper, or lemon hummus all work well in this recipe.
  • Make it your own. Swap in sliced tomatoes, shredded carrots, sprouts, or avocado depending on what’s in your refrigerator.
  • Add extra protein. Top with a hard-boiled egg, grilled chicken, or smoked salmon for a more filling breakfast or lunch.
