Description

This hearty and wholesome breakfast bowl is the perfect way to start your day, offering a delicious balance of creamy, savory, and zesty flavors.

Ingredients

  • 2 Eggs, scrambled
  • 1/4 cup (60 g) Cottage Cheese
  • 1-2 Sausage Links, cooked & sliced (optional)
  • 3/4 cup (6 oz) Yellow Creamer Potatoes, sliced
  • 2 tsp (9 g) Neutral Oil
  • 1/4 cup (40 g) Cherry Tomatoes, halved
  • 3/4 cup (20 g) Arugula
  • 1 tsp Extra Virgin Olive Oil (for drizzling)
  • 1 tbsp (15 g) Feta Cheese
  • 1 tsp (1 g) Chili Flakes

Preparation

  1. Slice potatoes into 1/2-inch rounds and place on a prepared baking sheet or in the basket of an air fryer.
  2. Coat in 2 teaspoons of oil and season with salt and pepper.
  3. Bake in the air fryer at 400°F for 12 minutes.
  4. While the potatoes are air frying, scramble two eggs with 1/4 cup of cottage cheese in a small nonstick sauté pan over medium heat. Move the eggs around gently, ensuring that they do not stick.
  5. If using chicken apple sausage, cook according to package instructions.
  6. Once the potatoes are finished cooking, build your breakfast bowl starting with arugula, then the potatoes, sausage, cottage cheese-egg scramble, and tomatoes. Top with feta and chili flakes. Enjoy!
