  • 2 lbs. (900 g) Russet Potatoes, sliced into 1/2-inch rounds
  • 3 tbsp (45 mL) Olive Oil
  • 1 tsp Garlic Powder
  • 1 tsp Kosher Salt
  • ½ tsp Black Pepper

For the "Frost" Dipping Sauce

  • ¾ cup Sour Cream
  • ½ cup finely grated Parmesan Cheese
  • 1 tsp Black Pepper, freshly cracked
  • 1/8 tsp Salt

For the "Fire" Dipping Sauce

  • 1 cup Marinara Sauce
  • 1 tbsp Calabrian Chilies (plus more if you want it extra spicy)
  • Sliced Fresno Chilies, optional for additional heat

Preparation

  1. Preheat oven to 425°F (220°C). Slice potatoes into rounds. Toss potatoes with olive oil, garlic powder, salt, and pepper. Spread on a lined baking sheet and roast 30–35 minutes, flipping halfway, until golden and crisp.
  2. While potatoes roast, make your sauces by mixing together the ingredients in separate bowls.
