Ingredients

Snack Cakes

  • 2 oz dehydrated Potato Shreds, unseasoned
  • 1 medium Granny Smith Apple, cut into 1/4ths and shredded on a box grater
  • 1 oz Aged White Cheddar, shredded
  • 1 Egg
  • 3 tbsp Potato Starch (Corn Starch can be subbed)
  • 1/4 C Green Onion, chopped
  • 1/2 tsp Salt
  • 1/4 tsp White Pepper

Dipping Sauce

  • 1/2 C Plain Unsweetened Greek Yogurt
  • 3 tbsp Honey
  • 1 tsp Pumpkin Pie Spice (optional)

Preparation

1.) Rehydrate the potato shreds according to package instructions.

2.) Shred the apples and cheddar on a box grated, using the side with the larger shred holes.

3.) In a bowl, combine the fully rehydrated potato shreds, shredded apples, shredded cheddar, starch, eggs, and seasonings. Mix gently.

4.) With that mixture, begin to form patties that are approximately 2 inches in diameter.

5.) In an air fryer or conventional oven, spray a foil-lined tray lightly with oil and place the patties down. Don’t overcrowd the tray. These can be baked in batches if there are space constraints. Lightly spray the tops of each patty with oil.

6.) Bake at 400 degrees F for 15 minutes.

7.) While the snack cakes are baking, mix the Greek yogurt and honey to create the sauce.

8.) Allow the snack cakes to cool slightly and garnish with the fresh green onions.
