Ingredients

  • 4 thick slices Brioche or Challah Bread (stale = better absorption)
  • 2 cups (60 g) plain ridged Potato Chips, crushed into small flakes
  • 3 large Eggs
  • 3/4 cup (180 mL) Whole Milk (or Half & Half if you want it richer)
  • 2 tbsp Maple Syrup (plus more for serving)
  • 1 tsp Vanilla Extract
  • 1/2 tsp Cinnamon
  • Pinch of Nutmeg
  • Pinch of Salt
  • 2 tbsp Unsalted Butter (for cooking)

Preparation

  1. Spread crushed potato chips on a shallow plate.
  2. In a wide bowl, whisk eggs, milk, maple syrup, vanilla, cinnamon, and salt until smooth to create the custard.
  3. Dip each slice of bread into custard, letting it soak 10–15 seconds per side. Press soaked bread firmly into crushed potato chips so they coat both sides.
  4. Heat butter in a large skillet or griddle over medium heat. Cook slices 2–3 minutes per side until golden brown, potato chip crust crisped.
  5. Plate hot, drizzle generously with maple syrup, and serve!
