Chorizo Stuffed Potatoes

Serves 4



Chorizo stuffed potatoes

  • 12 frozen half-shell potatoes
  • 400 g chorizo, chopped
  • 1/2 onion, chopped
  • 2 garlic cloves, chopped
  • 1 cup double cream cheese, crumbled
  • 2 guajillo chilies, thinly sliced


  1. Sauté the chorizo with the garlic and onion; season, add chilies and remove from heat when they begin to brown.
  2. Meanwhile, bake potatoes at 355ºF for 8 minutes.  
  3. Stuff them with the chorizo mixture and add cheese.
