Potato Flautas in Green Sauce

Serves 4



Green Sauce

  • 10 Green Tomatoes
  • ¼ Onion
  • 2 Garlic Gloves
  • 1 Serrano Chili
  • 1 Cup Cilantro Leaves
  • Salt and Pepper to taste


  • 1½ cups Water
  • ¼ cup Butter in Medium Cubes
  • 1½ Skim Milk
  • 12 Tortillas
  • ⅓ cup Frying Oil
  • 1 cup Filleted Romaine Lettuce
  • ⅓ cup Low Fat Cream
  • 250 g Crumbled Panela
  • 2 cups Instant Mashed Potatoes


  1. Boil the tomatoes, onion, garlic and serrano chile; when they change color, blend with the cilantro leaves.
  2. Return to a boil and adjust seasoning; set aside.Heat the water with half of the butter; when it starts to boil, add the mashed potatoes,the remaining butter and the milk.
  3. Pour into a medium bowl, cover with plastic wrap and let cool.
  4. Prepare the flautas with the mixture and lightly brown in a little hot oil; remove to absorbent paper.
  5. Serve flautas, dip in salsa verde and top with lettuce, cream and cheese.
