Potato Flautas in Green Sauce

Ingredients

Green Sauce

  • 10 Green Tomatoes
  • ¼ Onion
  • 2 Garlic Gloves
  • 1 Serrano Pepper
  • 1 Cup Cilantro Leaves
  • Salt and Pepper to taste

Flautas

  • 1½ cups Water
  • ¼ cup Butter, cubed
  • 1½ Skim Milk
  • 2 cups Instant Mashed Potatoes
  • 12 Tortillas
  • ⅓ cup Frying Oil
  • 1 cup shredded Romaine Lettuce
  • ⅓ cup Low Fat Sour Cream
  • 250 g Crumbled Panela Cheese

Preparation

  1. Boil the tomatoes, onion, garlic and serrano pepper. When they change color, blend with the cilantro leaves.
  2. Return the sauce to a boil and adjust seasoning; set aside.
  3. Heat the water with half of the butter.  When it starts to boil, add the mashed potatoes, along with the remaining butter and the milk.
  4. Pour into a medium bowl, cover with plastic wrap and let cool.
  5. Prepare the flautas by spooning some of the mashed potatoes into a tortilla and rolling. Lightly brown the flautas in a little hot oil, and then remove to absorbent paper.
  6. Serve flautas in the salsa verde, and top with lettuce, sour cream, and cheese.
