Description

Perfect for a snack, appetizer, or even a light meal before a workout, these pizza cups made with a potato-based crust are a fun twist on the classic pizza slice. Plus, they're baked in a muffin tine, making them easy to prep and take with you

Ingredients

+

Dough

  • 1 c (57 g) Instant Potato Flakes
  • 1 c (240 ml) Cold Water
  • 1/2 c (57 g) Grated Parmesan
  • 1/2 c (60 g) Potato Starch
  • 1/2 tsp Italian Seasoning
+

Toppings

  • 3/4 c Marinara Sauce
  • 3/4 c Mozzarella
  • 1 Egg
  • Pepperoni, Sausage, Chopped Veggies (optional; this will change the nutritionals)

Preparation

  1. Preheat the oven to 400°F.
  2. Mix all the dough ingredients together in a mixing bowl until combined; the dough should be slightly tacky but easy to work with.
  3. Divide the dough into 12 equal pieces, shape them into small balls, and gently press into disks. Press them into muffin tins that have been lightly sprayed with nonstick spray.
  4. Bake the pizza shells for 20 minutes.
  5. Remove from the oven and place a tablespoon of sauce in each round and top with a tablespoon of mozzarella and desired toppings. Bake for an additional 5-7 minutes.
  6. Serve and enjoy
