  • 4 red potatoes
  • 1 cup cherry tomatoes
  • 2 cloves garlic
  • 2 tbsp olive oil
  • salt & pepper
  • Parmesan
  • basil

Preparation

  1. Spiralize potatoes and cook them in boiling salted water until just tender.
  2. Heat olive oil and add tomatoes, garlic, and season with salt and pepper. Cook until tomatoes are blistered.
  3. Plate potatoes and top with blistered tomatoes, basil, and parmesan.
