Potatoes with Sweet Sour Dip

Serves 4


  • 8 frozen potato wedges
  • 1 Orange, peeled and cut into pieces
  • 1 Mango, cut into small cubes
  • 1 Cucumber, with skin, without seeds, cut into cubes
  • 1 Apple, with skin, cut into cubes
  • 1 Onion, finely chopped
  • ½ cup tamarind concentrate
  • 4 Tablespoons honey
  • 2 Tablespoons chopped parsley
  • Hot pepper seeds
  • Salt


  1. Preheat oven at 356°F
  2. Bake potato wedges until well cooked; set aside.
  3. Mix tamarind concentrate with honey; add remaining dressing ingredients; season to taste,mix well.  
  4. Serve potato wedges with the dip.
