Ranch

  • 1 medium yellow potato (5.3oz), peeled, boiled (Can use Russets, Reds, or rehydrated dehy, if preferred)
  • 1 1/2 tablespoons shallot, finely diced (22g)
  • ½ cup Extra Virgin Olive Oil (118mL)
  • 1 tablespoon lemon juice (17g)
  • ½ teaspoon salt (3g)
  • 3 teaspoon dill, dried or fresh (18g)
  • 1 teaspoon granulated garlic (6g)
  • ½ teaspoon onion powder (3g)
  • ½ teaspoon mustard powder (3g)
  • Pinch of white pepper (2g)
  • ½ cup plant-based cream cheese, dairy-containing cream cheese, or buttermilk (4oz)
  • 1 tablespoon fresh chives (17g)
  • 2 tablespoon fresh parsley (34g)
  • 1/2 cup water (4oz)

Preparation

  1. Skin the potatoes and cut them into uniform pieces. Boil the potatoes until they are fork-tender. Allow the potatoes to cool before blending.
  2. Add the potatoes, shallots, EVOO, lemon juice, salt, garlic powder, onion powder, white pepper, mustard powder, and cream cheese in a blender. Blend until smooth.
  3. In a large bowl, pour in the now-blended ingredients and fold with the fresh herbs- dill, chives, and parsley.
  4. Serve with your favorite foods!
