Ingredients

  • Instant Mashed Potatoes, prepared
  • 7oz dried codfish
  • 1 onion, cut into pieces
  • 2 bay leaves
  • 1/4 cup olive oil
  • 3 cloves of garlic, finely chopped
  • 1 tomato, finely chopped
  • 4 red peppers
  • Salt and Pepper to taste

Preparation

  1. Prepare mashed potatoes according to the instructions on the package.
  2. Soak the codfish, changing the water as many times as needed to remove salt; boil it with onion and bay leaves for 15 minutes; let cool and tear into little pieces.
  3. Heat olive oil and fry garlic until slightly brown; remove from heat, add cod and mashed potatoes, blend well; add tomato.
  4. Cut the top of the peppers, remove veins and stuff them with mashed potato mixture;bake at 355°F for 30 minutes.
