Ingredients

Mashed Potatoes

  • 2 lbs. Russet Potatoes, diced into 2-inch pieces
  • 1 cup Whole Milk
  • 6 tbsp Unsalted Butter, softened
  • Kosher Salt, as needed
  • White Pepper, as needed

  • Black Olives, sliced and cut in half (Eyes)
  • Cherry Tomato, roasted (Nose)
  • Red Bell Peppers, sautéed or roasted (Hat)
  • Brussel Sprouts, roasted
  • Chicken, grilled and chopped
  • Parmesan Cheese, grated
  • Herbed Butter, melted
  • Green Beans, blanched or sautéed
  • Green Onions, sliced
  • Bacon, crumbled
  • Cheddar Cheese, grated
  • Gravy, warmed
  • Steak, grilled and chopped

Preparation

  1. Peel your potatoes and cut them into uniform pieces—we recommend 2-inch pieces. Uniformity will ensure they cook evenly.
  2. Add diced potatoes to a bowl of cold water and let them sit for a few minutes—you should see starch sink to the bottom of the bowl. Then rinse them 2-3 times until the water runs clear.
  3. Transfer your potatoes to a large stockpot and add enough cold water to cover them by about 1-2 inches. Over high heat, bring your pot to boil and then reduce to a simmer to cook the potatoes until they’re completely fork-tender and offer no resistance when pierced with a knife.
  4. Once cooked, drain the potatoes in a colander and allow them to sit for 1-2 minutes to release steam
  5. Now it is time to mash and season the potatoes. Since they will be going through a piping bag, it is highly recommended to use a ricer or food mill, to ensure that the potatoes will not be lumpy. You can also use a masher or whisk to mash them directly in the pot you used to boil them if you do not have the former equipment—try to get as many lumps out as possible so it does not clog the piping bag.
  6. Warm your milk and butter (or other dairy and fat) in a separate pot.
  7. Gradually add your warmed milk and butter to the potatoes, gently folding them in with a rubber spatula. Going slow gives your dairy and butter time to work into the starch, achieving the ideal texture. If you add dairy in too quickly, you may wind up with watery potatoes. This also allows you to monitor the consistency of your potatoes and adjust as you go.
  8. Finally, give your mashed potatoes a taste and adjust the seasoning with salt and pepper, if needed. Allow the potatoes to cool slightly.
  9. Once cool enough to handle, transfer the mashed potatoes to a piping bag fitted with a star decorating tip.
  10. Pipe a jolly Santa Claus onto a cheese board. Start with a base layer of mashed potatoes spread onto the board using a spatula to make a shape face. Then pipe a mustache, beard, eyebrows, and hat details. Fill in his face with the recommended items listed above for his nose, eyes, and hat. Fill in the remainder of the board with the optional ingredients to dip into the  mashed potatoes.
    • The ingredients listed above all pair nicely with mashed potatoes, but feel free to make it your own!
