Description

These crispy, bite-sized fritters include potatoes, cornmeal, and savory seasonings for an inventive twist on a Southern classic. They're delightful with any sauce, especially Cajun ranch, hot honey, and—our personal favorite—chicken gravy.

Ingredients

  • 1 1/4 c All-Purpose Flour
  • 3/4 c Yellow Corn Meal
  • 1/4 c Granulated Sugar
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 c Whole Milk
  • 1/4 c Vegetable Oil
  • 2 Large Eggs
  • 1 1/2 c Mashed Potatoes
  • 1/2 Sour Cream
  • 1 c Frozen Shredded Potatoes
  • 1 c Yellow Onions, diced
  • 1/2 c Celery, diced
  • 1/2 c Green Bell Pepper, diced
  • 1 tbsp Chicken Bouillon Powder
  • 1 tbsp Cajun Seasoning
  • 1 tsp Granulated Garlic
  • 1 tsp Rubbed Sage
  • 1 tsp Black Pepper
  • 1/4 c Parsley, chopped
  • Vegetable Oil (for frying)

Preparation

  1. Preheat a fryer filled with vegetable oil to 360°F (182°C).
  2. Combine flour, cornmeal, sugar, baking powder, and salt in a medium bowl.
  3. In a large bowl, combine the wet ingredients: milk, oil, eggs, mashed potatoes, and sour cream.
  4. Gently add the dry ingredients to the wet ingredients until just combined, and then gently fold in the shredded potatoes, onions, celery, bell pepper, seasonings and chopped parsley until evenly distributed.
  5. Using a 1-ounce portion scoop, gently ladle the batter into the hot oil. The fritters should float, browning on one side.
  6. After a couple minutes, carefully turn the fritters in the oil to cook the other side.
  7. Once they are golden brown on all sides (approx. 4-5 minutes), remove them from the oil and place them onto a baking sheet fitted with a wire rack to drain.
  8. Season them with salt to taste.
  9. Pair them with your favorite dipping sauce and enjoy!
