Description

A classic turkey club inspired potato salad comprised of cooked potatoes, succulent deli turkey, smoky bacon bits, juicy tomatoes, soft Swiss cheese tossed in a zesty Italian dressing.

Ingredients

  • 12 cups (1680g) Medium Red Potatoes (Approx 5.3 oz)
  • 6 cups (1200g) Roma Tomatoes (Diced)
  • 3 cup (342g) Swiss Cheese Block (Diced)
  • 1 ½ cups (337g) Bacon, precooked (Chopped)
  • 3 cups (420g) Deli Turkey, precooked (Chopped)
  • 3 cups (720ml) Italian Dressing
  • 1 cup (104g) Green Onion (chopped)

Preparation

  1. Gather all ingredients and equipment.
  2. Dice potatoes.
  3. Place potatoes in a large saucepan and cover with cold water. Bring to a boil and cook uncovered for 15-20 minutes, until tender. Drain and place in a large bowl.
  4. Heat precooked bacon and chop. Set aside.
  5. To assemble, in large bowl add cooked diced potatoes (12 cups), deli turkey (3 cups), bacon (3 cups), Swiss cheese ( ½ cups), tomatoes (3 cups) and Italian dressing (2 cups), and add green onion (1 cup) and gently toss until fully combined.

  • ¼ cup red vegetables
  • 2 oz MMA
